With the new WooCommerce cart blocks the quantity selector is not working with the bundled products. It is working with the main product. But not with the sub products. I don’t know if this is a known bug.
As fas I can tell the new WC cart block is working with AJAX it don't have any update button anymore. So when you try to change the quantity of a product inside the bundle nothing happens. But when you change the bundled main product the total prices changes and a small updated popup is shown.
For your information, our plugin doesn't allow changing the selection of variation subproducts or the quantity of chosen subitems in cart. Since there are discounts and fixed pricing binded for subproducts inside smart bundles/composite, it would cause conflicts when allowing that. The only way to change the option is to remove the whole bundle/composite from cart and add it from the bundle/composite page again.
How it should display with our plugin on cart page:
Our plugin only allow customers to change the quantity of main bundle on the cart page. You can also see the Update cart button visible if you use our WPCstore theme or any WPC themes here: https://wpclever.net/downloads/category/themes/.

If you install WooCommerce on a new WordPress installation you automatically get this new cart block instead of the old shortcode.
I believe that is not just an issue with the Gutenberg block, but also with the theme or template you're using.
I once installed the Gutenberg block to check before with our WPCstore theme but there was no such error.

I've tested it in a default twenty-twenty-four theme and I still get the same bug. And before you ask, it's also not in conflict with another plugin. Unless it is also inconflict with a standard WordPress theme. I don't think it is an issue with the theme/template.

For your information, not all WordPress themes are optimized for WooCommerce. You might notice that the themes on WordPress have specific categories such as blogs, magazines, stores, ecommerce, etc. because the structure and code optimization will be different in these themes to serve different categories of business.
We do not consider 2024 as the standard theme for WooCommerce sites since there are many missing elements from this theme. Other external themes from different authors are optimized to serve their purposes as well.
You can kindly test when using only WooCommerce, our plugin and WPCStore theme or any of our themes to see the results.
When there is any external elements visible, the results might be distorted .That's why we need to offer the Premium customization service for Premium users to use with third-party plugins or themes.
So I have sent your report to our developers to confirm if this is a bug or not.
Our developers responded that this is not a bug, but a conflict with the Gutenberg block. Since the Gutenberg blocks are still under development, there are many elements missing for some themes and plugins to work properly. Our developers are not capable of fixing those errors at this time with the Gutenberg editor. They said that our plugins and themes are only compatible with the old Classic editor.
So you can kindly consider switch to using the classic cart page/template for your site to use our themes and plugins properly. Or you can find an alternative plugin in the WP repository that can work with the Gutenberg blocks to avoid this error. Hopefully, we can make it work with the new Gutenberg editor some days.

Well I've tested it now with the WPCstore theme Version: 2.0.3. And I still got this bug. Now I don't have it with the correct theme and the WordPress default theme, but also the your own theme. See video:
