We are a retail bakery that has a product that we sell only on Saturdays, but we'd like customers to be able to order it the afternoon before, beginning at 2:00 pm. In other words, we want the product hidden and unpurchaseable from Saturday closing (4PM) onward, Sundays–Thursdays, and Fridays until to 2pm. We want it visible and purchaseable Friday from closing (2PM) onward, and Saturday until closing (4PM).

If you use Set hidden, there's no need to use Set unpurchasable as when your product is visible, it will be purchasable.
So, you just need to set your products to be visible after 2 PM on Fridays and before 4 PM on Saturdays.
